Vegan Carrot Cake

No surprise carrot cake is a favorite here at the bunnies patch. πŸ€—πŸ₯• This VEGAN CARROT CAKE is insanely delicious! It’s moist, flavourful, fluffy and easy to make. Nobody will be able to guess it’s vegan. So let’s get cooking. Or I should say, let’s get baking! πŸ˜„

VEGAN CARROT CAKE
INGREDIENTS:
β€’1 1/2 cups plus 2 tablespoons flour
β€’1 cup sugar
β€’1 teaspoon baking soda
β€’1/4 tablespoon salt
β€’1 teaspoon cinnamon
β€’1/4 teaspoon cloves
β€’1/4 teaspoon nutmeg
β€’1/4 teaspoon ginger
β€’1 cup grated carrot
β€’1/2 cup chopped walnuts
β€’1/2 cup raisins
β€’1 teaspoon white vinegar
β€’1 teaspoon pure vanilla extract
β€’5 tablespoons vegetable oil
β€’1 cup water
METHOD:
Preheat oven to 350F. Grease an 8×8 baking pan. 
In a large bowl – whisk together flour, sugar, baking soda, salt and spices. Then blend in the carrots, walnuts and raisins. Add vinegar, vanilla, oil and water, mix well. Pour into baking pan. Bake 35-45 minutes. Let cool completely before frosting with your favorite icing.
