There are so many companies bringing out more and more vegan or plant based meat alternatives. From burgers to sausage to fish to chicken and the products aren’t stopping there. Research for pork alternatives are also in the making. We love these products and the brands selling them. 🙌🏼 We don’t wanna forget about the old fashioned black bean and veggie burgers, though. They are so yummy and a healthier option. Our BLACK BEAN AND QUINOA PATTIES are great for lunch or dinner in a burger bun with your favorite toppings but they’re also great for breakfast with a tofu scramble. So let’s get cooking! 🙂

BLACK BEAN AND QUINOA PATTY
INGREDIENTS:
•1/2 small onion, diced
•1 15oz can black beans, rinsed & drained
•1 1/2 cup cooked quinoa
•2 tablespoons dried parsley
•2 tablespoons flax meal
•1 teaspoon ground garlic
•1 teaspoon ground cumin
•1 teaspoon ground coriander
•juice of half a lemon
•5 tablespoons panko bread crumbs
•1 teaspoon baking powder
•4 tablespoons water
•salt to taste (we use pink Himalayan salt)
•canola oil for skillet
METHOD:
•In a food processor, pulse onion and half the black beans until combined.
•Scoop mixture into bowl and fold in the remaining ingredients.
•Mold the patties with your hands to create the burgers. Place to the side.
•Drizzle the skillet with canola oil.
•Heat a skillet over medium high heat. •Place the patties in the skillet but do not over crowd. You’ll want some room to flip.
•Once the patty has browned on the one side, flip and let other side brown.
I eat a lot of fish, turkey and chicken so when I can find other high protein, fiber options it keeps me from eating junk food and high carbs which I’m a sweet eater. I’m going to save some of you’re recipes.
