Skip the store bought flour tortillas and knead out some super simple and quick to make flour tortillas right in your own kitchen!
Over the weekend we had a craving for quesadillas. Unfortunately, just like the week before with a loaf of bread, we were low on flour tortillas! Never had made our own flour tortillas before, but since we’re all still in the stay at home order and not wanting to make our way through the grocery store six feet apart from other people…. We thought — Let’s make our own! Did some research on traditional tortillas and chose some simple ingredients that I think most of us who love being in the kitchen will have in our pantries. After tasting our first homemade tortilla our craving for quesadilla turned to a craving for tacos! We filled our taco with taco seasoned plant based chicken, iceberg lettuce, salsa, avocado, and spicy peach vegan greek yogurt. To make our Spicy Peach Greek Yogurt- puree 2-3 canned peach slices (can use a fresh peach if you have one), stir the puree into a 5 ounce container of (vegan) greek yogurt and a few drops of hot sauce. Just like that you have a tasty savory sweet yogurt that is perfect as a dip or sauce and even delish by itself! So let’s get cooking!

FLOUR TORTILLAS
INGREDIENTS:
*4 cups all-purpose flour
*1½ teaspoons salt
*1⅔ cups hot water (You want the water to be hot but not too hot that you’ll burn yourself as because you’ll be kneading the dough soon after adding the hot water)
*¼ cup vegetable oil
METHOD:
*In a large mixing bowl, whisk together the flour and salt.
*Add the hot water and oil. Mix together with a wooden spoon until you can’t mix anymore. Then flip the dough out onto a floured surface and knead dough until it becomes smooth and has the consistency of Play-doh.
*Divide the dough into 12 equal balls then slightly flatten each ball into a hockey puck shape. Flour both sides, set aside, and cover with a dish towel.

*Heat a large skillet over medium high heat.
*Roll out one of the balls of dough into a flat circle. Thin enough that you can almost see through it.
*Cook the tortilla for about one minute then flip and cook until golden brown spots appear. About 30 more seconds.

*Transfer the cooked tortilla from the pan onto a towel and cover it while you follow these steps for the remaining dough balls.

*Enjoy! 😊
*To store leftover cooked tortillas, place in a resealable storage bag with as much air pushed out as possible. Best if used within 7 days.
