Rosemary Mushroom Soup

Any foodie, especially vegetarians and vegans, know how flavorful yet elegant mushrooms can be. We love mushrooms. From putting them in a tofu scramble in the morning, to salads, to topping a delicious vegan burger with mushrooms and onions sauteed to perfection, it’s all a double thumbs up to us! Our love of mushrooms has brought us to our woodsy yet elegant ROSEMARY MUSHROOM SOUP.  This soup is loaded with flavor. Earthy rosemary, white button and baby portabella mushrooms intertwine together with creamy coconut milk and sophisticated Sauvignon Blanc for a finished product that makes a delicious first course but can also stand alone as an entree. So let’s get cooking!

ROSEMARY MUSHROOM SOUP

INGREDIENTS:

⭒1 small onion, diced

⭒2 garlic cloves, diced

⭒4 cups vegetable stock

⭒1 8 ounce carton white button mushrooms, sliced

⭒1 8 ounce carton baby portabella mushrooms, sliced

⭒1-2 sprigs of fresh rosemary, dice the leaves finely

⭒2 Tablespoons (vegan) butter

⭒1 cup full fat coconut milk *the coconut milk in a can*

⭒¼ cup cornstarch *if you would like the soup a little thinker, add an extra tablespoon*

⭒½ cup (vegan) Sauvignon Blanc wine

METHOD:

⭒Start by heating a large saucepan over med-high heat with a swirl of extra virgin olive oil to coat the bottom of the pan and 2 tablespoons (vegan) butter. 

⭒While the pan is heating up. Prepare the veggies, rosemary and garlic. When butter is melted add onion, and garlic. Let that cook for about a minute or two before adding the wine, rosemary, and mushrooms. Let sautee for about three minutes.

⭒Pour in the 4 cups of vegetable stock. Add some black pepper to taste. Let come to a low boil. Stirring occasionally. Turn heat down to low and let it simmer for about 20 minutes.

⭒After simmering, stir in coconut milk. 

⭒Stir cornstarch into 4 tablespoons cold water till a paste is formed. This mixture is called a slurry. Add the slurry to the soup. Let simmer for a minute or two.

⭒Garnish with some extra slices of mushrooms before serving, if you’d like.
