Pizza Meatball Bites

If you love the flavors of pizza, and spaghetti with meatballs, or meatball subs- We’ve got the perfect bite for lunch, dinner, or any gathering that requires fun finger food. Our PIZZA MEATBALL BITES combine the great flavors of cheese pizza and saucy meatballs. It’s like a tasty meatball sub in a handy, fork free bite! The best part of these bites is that they’re made with  plant based burgers (we used beyond meat, burger) and vegan cheese! So, let’s get cooking and then we’ll get baking a little too! 😁

PIZZA MEATBALL BITES

Makes 14-16 Bites

INGREDIENTS:

⭒1 roll of vegan friendly refrigerated biscuits

⭒1 package beyond meat burger patties

⭒jar tomato/pizza sauce

⭒1 bag shredded (vegan) mozzarella cheese

⭒1 Tablespoon soy sauce

⭒¼ teaspoon garlic powder

⭒¼ teaspoon onion powder

⭒½ teaspoon dried basil

⭒½ teaspoon dried oregano

⭒¼ teaspoon cayenne powder

⭒dash of hot sauce

⭒1 Teaspoon of both grated sweet onion and garlic clove

⭒enough flour, (vegan) panko bread crumbs in coat meatballs

⭒¼-½ cup aquafaba. (Aquafaba is the liquid canned chickpeas are in. Drain a can of chickpeas, reserving the liquid for this recipe. You can use the chickpeas for another recipe. Like hummus! Link for our Roasted Carrot Hummus below Pizza Meatball Bites recipe.)

⭒Oil for frying

METHOD:

–To Make Meatballs–

⭒In a mixing bowl, add 2 burger patties, grated onion and garlic. Add dash hot sauce, garlic powder, onion powder, dried oregano, dried basil, cayenne powder, and soy sauce.

⭒Roll mixture into small/medium bite sized balls.

⭒In three separate bowl-

Bowl 1: flour 

Bowl 2: aquafaba

Bowl 3: panko

⭒Roll balls in flour then aquafaba, then panko bread crumbs.

⭒Heat a skillet with about an inch of oil.

⭒Fry balls on one side until golden brown. Flip and fry other sides until golden brown. Do not crowd the pan.

⭒Let cool and drain on a paper towel or drip tray.

–To Assemble the bites–

⭒Flour work surface.

⭒Roll each biscuit out flat about 3” round.

⭒Add a little cheese, 1 teaspoon sauce over cheese, pinch dried oregano. Place a meatball in the center. Top with ½ teaspoon sauce over the meatball.

⭒Carefully fold sides up around meatball, pinching to seal. Repeat the process until all Pizza Meatball Bites are formed. 

⭒Keep flouring work surface as needed so dough does not stick. 

⭒Preheat the oven to 400°F for 10 minutes. Bake for 10-15 minutes.

⭒Serve with extra pizza sauce for dipping. Enjoy!
