Fried rice is often a popular choice for anyone ordering Chinese takeout. Who could blame you? It’s cooked rice that has been fried together with classic veggies like, carrots, onions, peas, and garlic in butter and soy sauce. Then they add fluffy buttery scrambled eggs to it. Truly it’s amazing how rice can be transformed into a yummy comforting dish! Now, if you are vegan, and are thinking— Sounds good but it doesn’t fit my dietary lifestyle. No worries, we’ve got you covered!! Our VEGGIE FRIED BROWN RICE will please a vegan or non-vegan. Easily use the brand Just Egg, and your favorite brand of vegan butter and this dish is all set for a relaxing couch cuddling, movies watching, eating a delicious vegan meal kinda night! We’ve switched it up a bit by using brown rice to give this dish a little more of a healthy note. This recipe is perfect for using up leftover rice as it works best with day old rice. If you don’t have leftover rice just be sure to make a cup of rice the night before wanting to serve the Veggie Fried Brown Rice. Let the rice cool and store it in the refrigerator in a covered dish until ready to be used. So, get the movies ready and let’s get cooking!

VEGGIE FRIED BROWN RICE:
INGREDIENTS:
- 1/2 cup Just Egg or 2 Medium eggs, beaten up to scramble
- 2 small carrots, chopped
- 1/2 cup frozen peas
- 2 garlic cloves, diced
- 1/2 white onion, chopped
- 4-5 green onions, thinly sliced
- 1 cup cooked brown rice
- 4 Tablespoons soy sauce
- 1 teaspoon sesame oil
- Up to 2 Tablespoons (vegan) butter
- Salt and pepper to taste
METHOD:
- In a medium-large skillet, melt a little butter. Add eggs, cook until scrambled. Remove from the pan. Set aside.
- Add a little more butter to the same pan. Heat until butter is melted, then add peas, carrots, white onion, and garlic. Season with salt and pepper to taste. Saute until veggies are soft.
- Increase heat to high, add a little more butter. Stir in until butter is melted. Add rice and soy sauce. Continue stirring for 4 minutes to fry the rice.
- Add scrambled eggs and green onions. Stir to combine. Remove from heat. Fold in the sesame oil. Taste and add more soy sauce if needed.
- Enjoy!
Wow, never thought that I’d be reading about a recipe for ‘healthy’ fried rice! And it looks simple enough that even I might manage it without having to call in assistance from my wife 🙂
Now, if you could just work your way through a typical Chinese takeaway menu and come up with healthy versions for all of the meals I’d be very grateful!

I love egg fried rice and I make my own sometimes – don’t generally put veggies in it though. Really ought to try this as it looks yummy.
