February for us seems to be filled with summer/Caribbean flavors. Loads of pineapple and coconut in our featured recipes and we’re hitting the tastebuds yet again with another tropical tasting dish. 🥥🌴🍍PINEAPPLE COCONUT CAULIFLOWER RICE has the sweetness of pineapple and the creaminess of coconut milk incorporated with low carb cauliflower rice. It’s super yummy and would be a great accompaniment to teriyaki tofu. So let’s get cooking!

PINEAPPLE COCONUT CAULIFLOWER RICE
INGREDIENTS:
•½ head cauliflower, riced
•½ cup diced pineapple
•1 cup whole fat coconut milk
•½ cup shredded coconut
•½ teaspoon garlic powder
•½ teaspoon dried basil
•1 small onion, diced
•2 garlic cloves, minced
•¼ teaspoon nutmeg
•olive oil
•cilantro for garnish
METHOD:
Rice cauliflower by hand or in a food processor. Set aside. In skillet drizzle olive oil, add garlic cloves, and onion. Saute until translucent. Add cauliflower rice, pineapple, shredded coconut, garlic powder, and nutmeg. Add coconut milk and cook until it begins to boil. Then simmer for about 15 minutes on low. Garnish with cilantro before serving.
