Chai Coffee Cake Squares

Has anyone else heard of people watching or playing Christmas movies and/or music during lockdown to help lift their spirits? We enjoy a good Christmas movie or holiday song as much as the next person but just can’t bring ourselves to binge into that kind of holiday entertainment just after celebrating Easter. However, baking using holiday flavors is a whole nother ball game! Our Chai Coffee Cake Squares have a blend of cinnamon, cloves, and ginger. As the scent fills the air and the spirit of Christmas lightens up the stress that these days may be bringing. These Chai Coffee Cake Squares are the perfect treat that’ll have you singing  ‘We Need a Little Christmas’ 🎶🎄🎶 So let’s get baking! 

CHAI COFFEE CAKE SQUARES

INGREDIENTS:

*2 cups flour

*¾ cup granulated sugar

*¼ cup light brown sugar

*2 teaspoons flax meal

*2 Tablespoons chia seed

*1 teaspoon baking powder

*½ teaspoon salt

*1 teaspoon ground cinnamon + more for topping

*¼ teaspoon ground cloves

*½ teaspoon ground ginger + more for topping

*⅔ cup vegetable oil

*5 Tablespoons water

*2 teaspoons pure vanilla extract

METHOD:

*Preheat oven at 350°F

*In a mixing bowl add the first 10 ingredients. Whisk to combine.

*In a separate large mixing bowl, combine, oil, water, and vanilla.

*Slowly add flour mixture to the oil mixture about ½ cup at a time. Stir together until both mixtures are just combined. Don’t over mix. If the batter seems kinda thick- no worries- that’s how it should be.

*Spray a 8×8 baking pan with non stick spray.

*Spoon batter into pan and use a spatula to smooth batter evenly in pan. Sprinkle more cinnamon and ginger over the top.

*Bake for about 30-40 minutes until golden brown and doing a toothpick test, the toothpick comes out clean.
