Quick and Easy Veggie Soup

A delicious soup filled with veggies, beans, garlic, and a little kick of hot sauce, because just about everything is better with a hit of hot sauce. Our QUICK AND EASY VEGGIE SOUP is perfect for the semi-homemade cook. Fresh garlic, potatoes, onion, celery, and cabbage cook quickly with a few cans of veggies and beans. Season with some dried oregano and basil and voila! Soup is served! It’s that easy and oh so good! For an added flavor level, serve with a squeeze of fresh lime juice. This tasty bowl is great whether served hot, cold or at room temperature. Let all the flavors have a chance to mingle and infuse together and it’s even better the next day!  So, let’s get cooking!

QUICK AND EASY VEGGIE SOUP

INGREDIENTS:

⭒2 garlic cloves, grated

⭒1 cooking onion, chopped

⭒olive oil for cooking

⭒2½ cups vegetable broth

⭒½ head fresh green cabbage, chopped

⭒2 medium potatoes, peeled and diced

⭒2 celery stalks, chopped

⭒1 can petite diced tomatoes

⭒1 cup canned corn, drained and rinsed

⭒1 15 ounce can mixed vegetable, drained and rinsed

⭒1 cup canned lima beans, drained and rinsed

⭒1 cup canned dark red kidney beans, drained and rinsed

⭒1 teaspoon dried oregano

⭒1 teaspoon dried basil

⭒1 Tablespoon dried minced onion

⭒1 Tablespoon hot sauce

⭒salt and pepper to taste

⭒1 teaspoon granulated sugar

⭒1 Tablespoon nutritional yeast

METHOD:

⭒Start by heating enough olive oil to coat the bottom of a large saucepan. Add garlic and onion. Saute for about 1 minute.

⭒Add broth and cabbage. Cook for about 5 minutes.

⭒Add potatoes and celery. Cook for about 10 minutes.

⭒Add tomatoes and corn. Let simmer for about 5 minutes.

⭒Add mixed vegetables, kidney beans, lima beans, dried oregano, dried basil, dried minced onions, hot sauce, sugar, nutritional yeast, salt, and pepper. Simmer on low for about 5 minutes.

⭒After the final 5 minute simmer, it’s ready to serve. Enjoy!
