Summer Corn Salad

We love having fresh garden style salads year round but even more so during the summer. Our Summer Corn Salad is one of our favorites. A luscious combination of sweet yellow corn, creamy avocado, juicy garden ripe tomatoes, subtle vidalia onion, hearty garbanzo beans, and fresh mint & parsley tossed together perfectly with humble extra virgin olive oil. It’s a simple salad that’s full of summertime flavor. You’re going to want to pack this for your next picnic! Recipe below!! 😊

SUMMER CORN SALAD

INGREDIENTS:

  • 15.25 oz can yellow corn, drained and rinsed
  • 15.5 oz chickpeas, drained (Save the liquid, you can use it in other recipes! 😉 Like our Coconut Crusted Squash. Recipe link can be found below today’s recipe.)
  • 1 small vidalia onion, diced
  • avocado, diced
  • 1 large handful fresh curly parsley, chopped
  • 5-6 large leaves of fresh mint, chopped 
  • 1 large tomato, diced
  • juice of 1 lime
  • 2 tablespoons extra virgin olive oil 
  • salt and pepper to taste

METHOD:

Place all ingredients in a large bowl, fold together. Enjoy! 💚

      1. Yea I’d like to start a slow transition to vegetarian diet so I’m in search of recipes that are delicious and seem easy to prepare. I always had this thought that vegetarian meals are harder to prepare and not satisfying but it seems I’m wrong. Following your blog now. Thanks for sharing your recipes. 😊

      3. Thank you! ☺️ That’s a really great advocacy! My journey is going to be challenging. My ethnicity is Filipino and our food is mainly meat-based. But I’m opening my eyes to the health and environmental benefits of plant-based diet so I’ve decided to start the transition. Hoping to be vegan one day but I think vegetarianism is a good place to start. Baby steps. 😆

      4. Yes, that is how we feel too. Have you tried Sweet Earth brand? They make plant-based chicken that is really good and tastes amazingly close to actual chicken! We like to put in in salad. Most grocery stores have it in the meat dept.

  2. This is absolutely being added to a dinner for this week and maybe a lunch too. Sounds absolutely perfect for the summer weather and anything with sweetcorn and avocado is a definite winner for me!
