Crunchy French Toast

As a meat free foodie, one of my favorite things is finding eats that are accidentally vegan. Like oreos, sweet chili doritos, and one that we used to form this recipe, captain crunch! It’s been a favorite cereal of mine since childhood and french toast has always been a loved weekend breakfast treat. So when we came up with the idea to combine the two and then veganize it, we knew we were on to something delicious. Our CRUNCHY FRENCH TOAST has broken down captain crunch flour (if ya will) coating custard like bread. Served with fresh berries, a dusting of confectioners sugar, and syrup of choice, this french toast the perfect choice for a brunch or a special weekend breakfast. So, let’s hop to it!

CRUNCHY FRENCH TOAST:

INGREDIENTS:
*** FOR THE CUSTARD ***

  • 3/4 cup Just Egg- Egg replacement
  • 1/2 cup plant-based milk (we like oat)
  • 1 teaspoon pure vanilla extract
  • Dash of salt

*** FOR CRUNCHY COATING ***

  • 2 cups regular captain crunch cereal
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cornstarch

*** OTHER ***

  • 3-4 slices of bread (we used multi-grain bread)
  • A neutral oil for cooking
  • fresh berries, confectioners sugar, and syrup – for topping

METHOD:

  • Start by placing the cereal in a sealable bag and crunch them up with a rolling pin until they are ground like a coarse flour consistency. Set aside.
  • In a bowl big enough to dip the bread into- whisk together Just egg, plant milk, vanilla extract, and dash of salt. Set aside.
  • In a separate bowl big enough to dredge the bread in- Combine together Captain Crunch “flour”, ground cinnamon, and cornstarch. 
  • Preheat a large skillet with a drizzle of cooking oil.
  • Dip each piece of bread into the custard mixture. Making sure that both sides have soaked up some of the mixture. 
  • Then dredge each piece of custard soaked bread in the cereal flour.
  • When the pan is hot- Place the coated bread in the pan and cook both sides for 2-3 minutes on low heat. Then cook on medium heat until both sides are golden brown.
  • Serve with fresh berries, confectioners sugar, and syrup.
  • Enjoy!
