Banana Oat Pancakes with Apple Raisin Compote

Got bananas that are a bit past their prime? The popular thought goes to banana bread but be honest with yourself– you’re not going to make banana bread! Instead get your mind set on pancakes! Our BANANA OAT PANCAKES WITH APPLE AND RAISIN COMPOTE is a good way to use up your overly ripe bananas. They are also so easy to make, no whisk need, just a good blender! Plus there’s a good chance you already have the ingredients in your cupboard. 


These pancakes taste like Autumn on a plate. The cinnamon in both the pancakes and compote bring the fall like feelings to this dish. Although the pancakes themselves are not very sweet they do have a subtle hint of peanut butter that is enhanced by the sweet maple in the apple raisin compote topping. Instead of traditional flour we’ve opted for oats to help these pancakes be on the healthier side. To keep this recipe vegan, they have no egg in the batter and it’s amazing how fluffy they get without any traditional pancake ingredients. This recipe makes about 4-5 small pancakes. You’ll go bananas for these pancakes! Sorry, I just had to go there but I am sure you’ll really enjoy them.  So let’s hop to it!

BANANA OAT PANCAKES WITH APPLE AND RAISIN COMPOTE:

PANCAKE INGREDIENTS:

  • 1 Cup old fashioned oats
  • 2 Ripe bananas
  • 1 Tablespoon creamy peanut butter
  • 1 Teaspoon pure vanilla extract
  • 1/2 Cup milk of choice– We used cashew milk
  • 1/2 Teaspoon ground cinnamon
  • 1/2 Teaspoon chia seeds

METHOD:

  • Start by preheating a skillet with a spray of non-stick cooking spray on low heat.
  • While the skillet is preheating, mix up the pancake batter— Place all ingredients in a powerful blender and blend until everything is smooth.
  • When the skillet is hot, use a small ladle to spoon some of the batter into the skillet. When it puffs up and sets on the bottom, give it a flip . Heat that side until it is set. Remove from the pan and continue this process with the remaining batter. Spray the skillet with cooking spray before making each pancake.

APPLE AND RAISIN COMPOTE INGREDIENTS:

  • 1 Small apple, diced
  • Juice of 1/2 a lemon
  • 2 Tablespoons maple syrup
  • 2 Tablespoons water
  • 2 Tablespoon brown sugar
  • 1/2 Teaspoon ground cinnamon
  • 1 box of raisins, 1.33 ounce sized box.

METHOD:

  • Place all ingredients in a small saucepan. Cook on low heat until the apples become tender. Stir occasionally so the sugar doesn’t burn.
  • When the apples are tender, remove from the heat and let cool a bit so it can thicken up a little.
  • Pour over the pancakes.
  • Enjoy!
